Ingredients
- Beef Back Ribs: Beef back ribs are the meat remaining after the prime rib roast is cut. The meat attached to the rib bones is the beef back ribs cut. These ribs are known to be quite lean as they contain a limited amount of meat. However, when properly cooked, you can still find a decent amount of juicy and delicious beef.
- BBQ Sauce: use your favorite store-bought sauce or a homemade BBQ sauce.
How to Cook Beef Ribs in the Oven
- Remove the beef ribs from the refrigerator and let sit at room temperature for 30 minutes. Then, remove the membrane from the back of the ribs on the bone side. Rub the top of the ribs with mustard, getting the sides and edges to use as a binder, brushing the mustard all over the meat.
- Evenly sprinkle the top of the ribs with the seasoning blend, getting the sides and edges. Place the ribs on a large sheet of foil on a large baking sheet and fold the edges up. Then, with another sheet of foil on top, fold it to wrap the ribs completely.
- Bake at 275 degrees until the ribs reach an internal temperature of 200-203 degrees F, which will take 4-4 1/2 hours. Remove the ribs from the foil, place them on the large baking sheet, and brush with the BBQ sauce.
- Place back in the oven under a broil for 3-5 minutes until the sauce caramelizes on the top. Remove the ribs from the oven and allow them to rest for 15 minutes before cutting.
Storage & Make Ahead Information
- Make Ahead: Prepare the beef ribs as directed in the recipe. Allow to cool and wrap in foil. Store in the refrigerator for up to 2 days.
- Storage: Store in an airtight container in the refrigerator for 2-3 days.
- Freezing: Allow the ribs to cool to room temperature. Wrap in foil, then place in a freezer-safe container or bag. Store in the freezer for up to 3 months. Remove to the refrigerator overnight to thaw.
- Reheating: Wrap the ribs in foil and bake in the oven on a baking sheet at 225 degrees F for 30 minutes or until the ribs reach an internal temperature of 165 degrees F.

- 5 pounds beef back ribs
- 2 tablespoons coarse ground black pepper
- 2 tablespoons coarse salt
- 2 teaspoons granulated garlic
- 2 teaspoons granulated onion
- ½ teaspoon ground coriander
- ½ teaspoon chili powder
- 2 tablespoons mustard or dijon
- ½ cup bbq sauce
Instructions
- Remove the beef ribs from the refrigerator and let sit at room temperature for 30 minutes.
- Preheat the oven to 275 degrees F.
- Remove the membrane on the back of the ribs on the bone side (if you can get a corner of it, you can just peel it off with your fingers, if needed start it with a sharp knife)
- In a small bowl combine the seasoning blend, stir together.
- Rub the top of the ribs with mustard, getting the sides and edges, to use as a binder, brushing the mustard all over the meat.
- Evenly sprinkle the top of the ribs with the seasoning blend, getting the sides and edges.
- Place the ribs on a large sheet of foil on a large baking sheet, and fold the edges up, then using another sheet of foil on top fold it in to wrap the ribs completely.
- Bake at 275 degrees until the ribs reach an internal temperature of 200-203 degrees F which will take 4-4 1/2 hours.
- Remove the ribs from the foil, placing on the large baking sheet and brushing with the BBQ sauce.
- Place back in the oven under a broil for 3-5 minutes until the sauce caramelizes on the top.
- Remove the ribs from the oven and allow to rest 15 minutes before cutting.
- Slice the ribs apart in between the bones. Serve immediately.
