These easy to make Cheesy Chicken Fritters are seasoned with an easy spice blend and packed with cilantro, green onion, lime juice, and plenty of cheese. Greek yogurt and egg add extra protein to make these a protein packed lunch or dinner idea. Cook them up in the air fryer, oven, or skillet.
Chicken Fritters- Tex Mex Style
These chicken fritters are a powerhouse in flavor and protein! They are easy to mix together and can be cooked in a multiple of ways. My personal favorite is to use the air fryer. Although if you’re making a large batch of them the oven is going to be easiest.
These fritters make a great protein packed lunch or dinner main dish. Serve up with our Mexican Salad, Elotes, or Roasted Mexican Vegetables.

Ingredients Needed
- Chicken: Boneless, skinless chicken thighs are my favorite. This recipe works perfectly with a Costco sized pack of Organic chicken thighs (this is what I keep in my freezer!). But you can also sub with chicken thighs. Just be sure there are no bones since we will be chopping the meat up small to form fritters. This creates a better texture than using pre-ground chicken.
- Greek Yogurt, Eggs, & Bread Crumbs: The combination of these create a tender, moist chicken fritter that holds together through baking. We also get a boost of protein from the greek yogurt! You can use more greek yogurt and leave out the eggs if needed.
- Cheese: My favorite option is to use Monterey Jack in these. You can use cheddar for a different flavor and coloring.
- Green Onion, Cilantro, and Lime Juice: Adds lots of fresh citrus and herby flavors.
How to Make Chicken Fritters
- Grind up the chicken using a food processor until no large chunks remain. Then combine the remaining ingredients with the ground chicken.
- Divide the chicken mixture into equal portions (this recipe makes 13 fritters). Form the chicken into patties with your hands.
- Air fry the chicken fritters at 400 degrees until they reach an internal temperature of 165 degrees F. This will take 12-15 minutes depending on your air fryer.

Cheesy Chicken Fritters
Ingredients
- 1½ pounds chicken thighs skinless, boneless
- 2 large eggs
- ⅓ cup greek yogurt plain
- ⅓ cup bread crumbs plain
- 1 cup Monterey Jack cheese grated
- ½ bunch cilantro chopped
- 1 teaspoon salt
- ½ teaspoon chili powder
- ½ teaspoon garlic powder
- ½ teaspoon cumin
- ½ lime juiced
- 2 cloves garlic minced
- 2 green onions sliced
Instructions
- Add the chicken thighs to a food processor and pulse until chicken is finely chopped up no large chunks.
- In a large bowl combine the chicken, eggs, greek yogurt, bread crumbs, grated cheese, chopped cilantro, and seasonings. Stir this all together until well combined.
- Using a large scoop, divide the chicken mixture into 16 equal amounts, form into a patty shape.
- Preheat the air fryer. Spray with avocado oil. Then place as many chicken fritters will fit in a single layer. Air Fry at 400 for 12-15 minutes. Always check internal temperature to ensure that the chicken is cooked through at 165 degrees F.
- Serve with a drizzle of crema or sour cream.
Notes
- Cook in a skillet over medium heat with a small amount of avocado oil, cook each side for 5-7 minutes until browned.
- Bake on a large sheet pan at 425 degrees for 15 minutes. Always check the internal temperature to ensure the fritters reach an internal temperature of 165 degrees F.
