I’m not sure who came up with the idea of loaded fries, but I think we can all agree they deserve a medal.

There’s something so irresistible about a tray of golden, crispy fries piled high with melty cheese, crunchy bacon, and a sprinkle of green onions.

It’s a little indulgent, a lot of fun, and absolutely the kind of dish that gets people gathered around the table (or couch). Whether it’s game day or a casual weekend hangout, these loaded fries are always a hit in my house—and with endless topping possibilities, you can make them your own every time!

  1. Line a large baking tray with parchment paper or a silicone baking sheet and spread the fries out into a single layer. Bake the fries for 25-30 minutes or according to directions on the package, tossing the fries halfway through baking for optimal crispiness.

  1. While the fries bake, prepare the toppings by cooking and chopping the bacon, and grating the cheese.
  2. Sprinkle the cheese on top of the fries, then add the crumbled bacon, and continue to bake an additional 2-3 minutes until the cheese is melted.

  1. Top the fries with pickled jalapeños, diced green onion and a dollop of sour cream if desired. Serve with some Homemade Ranch Dressing for extra flavor!

Ingredients  

  • 28 ounce bag frozen French fries (can use any style)
  • 2 cups Colby jack cheese grated
  • 6 strips bacon cooked and crumbled
  • 3 scallions thinly sliced
  • pickled jalapeños to taste

Toppings

  • ¼ cup sour cream
  • ½ cup ranch dressing

Instructions 

  • Preheat the oven to 425℉, or to heat according to directions on the French fries. 
  • Line a large baking tray with parchment paper or a silicone baking sheet and spread the fries out into a single layer. 
  • Bake the fries for 25-30 minutes or according to directions on the package, tossing the fries halfway through baking. 
  • While the fries bake, prepare the toppings by cooking and chopping the bacon, and grating the cheese.
