Weeknight Winner: Easy Fajita Bowls with Ground Beef

Ground beef fajita bowls with veggies, rice, sour cream, and lime wedges.

There’s something so satisfying about a meal that checks all the boxes: quick, easy, flavorful, budget-friendly, and, most importantly, a hit with the whole family. Enter these Ground Beef Fajita Bowls. They’ve been my answer to those “what’s for dinner?” nights when time feels short, but I still want something that tastes like I put in way more effort than I actually did.

The trick here is in the homemade fajita seasoning, which transforms simple ground beef into something that tastes like sizzling fajita meat straight off the grill. A squeeze of fresh lime, a sprinkle of cilantro, and suddenly, dinner feels a little more special. Pair it with rice and those caramelized fajita veggies (the ones my kids surprisingly do not pick out), and you’ve got a one-bowl wonder that’s just as good for a busy weeknight as it is for meal prep.

If your family loves bold, Tex-Mex flavors as much as mine does, this recipe will slide right into your regular rotation.
