All About Baked Avocados with Egg

Indulge in a scrumptious breakfast with these baked eggs in avocados! These small avocado boats are loaded with creamy, soft-baked eggs and all the nutrients you need to start your day right. Whether you’re in a rush on weekdays or enjoying a lazy brunch on the weekends, this easy-to-make option is perfect.

Ingredients Needed

  • Avocados: use medium to large size avocados for this recipe, we want to have them big enough to hold the egg filling while it bakes.
  • Eggs: use large size eggs, anything bigger will be too big to fit inside the avocado.
  • Bacon: an optional ingredient, these can be made without the bacon, but it is highly recommended!
  • Everything Bagel Seasoning: a fun seasoning filled with flavor thanks to minced onion and garlic, plus sesame seeds and flakey salt. Use store-bought or homemade everything bagel seasoning.
  • Salt & Pepper: not required thanks to the bagel seasoning, but add to taste if needed.

How to Make

  1. Precook the bacon, this ensures that the bacon is cooked completely through.
  2. Slice the avocados in half and scoop out just enough avocado to make a spot large enough to hold an egg.
  3. Place the bacon in the avocado and crack the egg directly over the avocado into the well from removing the pit.
  4. Bake at 425 degrees F for 12-15 minutes until the eggs are mostly set, the top of the yolk will appear overcooked, but the inside will still be runny.

Recipe Tips & Tricks

  • Avocado skin, leave the skin on while baking, this adds the support needed to keep all the filling inside the avocado.
  • How to keep upright: your avocados may want to tilt or lean to the side, dumping out the egg. To keep them level and all the eggs inside, prop them next to one another in a small baking dish, bake them in ramekins, or use small bits of rolled-up foil if needed to prop them up.
  • Bacon: if adding the bacon, be sure to partially cook it before adding it to the avocado. They won’t bake long enough for the bacon under the egg to cook fully.
  • Scoop the avocado: most likely removing the pit from the avocado won’t make a big enough space for one egg, scoop out some of the avocado to make a larger space and use the extra avocado to make a guacamole or smashed avocado to enjoy with your meal.

This recipe calls for baking an egg in an avocado at 425 degrees for 12-15 minutes. I recommend giving the baking tray a slight shake to check how set the eggs are. There will be a slight wobble in the center with the runny yolk, but the whites should be set around the yolk.

You might even see a slightly hardened yolk cap on the top, which is normal. Don’t fear, once you poke through that or remove it with a fork the yolk will still be runny underneath.

Super simple to put together these avocados are filled with bacon and eggs then baked to create a delicious low carb friendly breakfast dish!

Ingredients  

  • 2 large avocados
  • 4 slices bacon bacon
  • 4 large eggs
  • ½ teaspoon bagel seasoning

Instructions 

  • Preheat oven to 425℉ degrees. Line a baking sheet with parchment paper or spray with a non stick spray. Set aside.
  • In a large skillet cook the bacon most of the way. Don’t cook completely because it will bake in the oven also.
  • Cut the avocados in half and remove the pit. Spoon out the avocado around the area the pit was to make the crater larger. Set the avocado aside to enjoy on it’s own or as guacamole.
  • Cut the cooked bacon strips in half and place two halves in each avocado.
  • Crack one egg into each avocado. It's ok if the white part runs out of the avocado slightly, just keep the yolk in the crater.
  • Bake for 12-15 minutes until eggs cooked. The yolk will jiggle when if you shake the pan, but whites will be set.
  • Remove and allow to cool for a couple minutes, be careful as the avocado skin will be hot.
  • Sprinkle with everything bagel seasoning or salt and pepper to taste.

Notes

Serve immediately. It is not recommended to make these ahead of time or to reheat.

  1. What I like about this recipe is that the avocados are cut and function as “bowls” for the egg. My mod was to go ahead and cook the bacon super crispy and crumble them. I really couldn’t “perfect” those recipes that required the egg to be cooked in both halves of the avocado. This was MUCH easier and more sensible. And, yes, my wife and I both love runny eggs, so this recipe was PERFECT. Thank you.
