No Bake Peanut Butter Brownie Bites. This is a quick and easy no bake dessert recipe. Chocolate-y brownie and creamy peanut butter mixed together for a tasty treat!

How to make No Bake Peanut Butter Brownie Bites:

  1. Heat treat the brownie mix: this is to ensure that no one gets sick from eating raw flour which is in the brownie mix. You can either heat treat in the microwave or in the oven. Either way the brownie mix needs to reach an internal temperature of 165℉. 
  2. Mix in the peanut butter: this will make a super dry dough. 
  3. Add milk as desired. 1/3-1/2 cup will be needed to get the dough to a consistency that will stick together when rolled. 
  4. Scoop & roll. Use a small cookie trigger scoop to help make all the brownie bites the same size. The dough may seem dry at this point still, but working with it in your hands warms the peanut butter to help the dough stick together nicely when rolled into a ball. 
  5. Chill: these no bake brownie bites are best served cold. I love storing them in a sealed container in the fridge and enjoying whenever!

How to Store these no bake brownie bites:

After rolling into balls, the brownie bites can be stacked into a container. Keep them covered or in a sealed container in the refrigerator for up to 5-7 days. 

 The best way to enjoy these..cold.  I love to eat them right out of the refrigerator.  A friend of mine from church shared with me that she makes them and keeps them in the freezer and just snacks on them straight from there!

Possible variations:

  • Using another nut butter: changing the peanut butter to another type of nut butter, like almond butter, will definitely change the texture of the end result. I would recommend using a smooth, creamy nut butter to help make it easier to mix in. 
  • Milk options: you can use any milk you prefer (coconut or almond milk are great options) this is to help make the dough not so dry and gives the ability to roll the dough into a ball shape.

Ingredients  

  • 1 (18.3 ounce) brownie mix (520 g)
  • 1 cup peanut butter
  • cup milk

Instructions 

Heat Treat Brownie Mix

  • Microwave Instructions: pour the brownie mix into a large heat safe bowl. Heat for 15 second increments, stirring between each, until the internal temperature of the mix is 165℉. Takes approx 1-1.5 minutes.
  • Oven Instructions: preheat the oven to 300℉. Spread the brownie mix over a large baking sheet lined with parchment paper or a silicone baking mat. Bake the mix at 2 minute intervals, stirring in between until the internal temperature reaches 165℉. Takes approx 5 minutes.
  • Once heat treated, allow the mix to cool back down to room temperature. You may need to whisk or run through a sifter if clumps formed during heat treatment.

No Bake Peanut Butter Brownie Bites

  • In medium size mixing bowl combine the brownie mix and peanut butter. Stir and then knead until combined.
  • Add the milk slowly and stir until desired consistency is reached.
  • Taking a tablespoon amount(use a cookie scoop to help ensure a consistent size) at a time roll the dough into small balls with your hands.
  • Serve immediately or store in a covered container in the refrigerator.

  1. These were quick, easy & yummy. I made mine pretty small and rolled them in crushed nuts. Huge hit – only lasted a few minutes (except the ones I hid for mama in the freezer).

    I am doing election day anxiety cooking lol and tumbled upon your site and my mind is going full speed with all your ideas. Moving on to the oreo footballs and sapapilla cheesecake rolls. Thank you for all the ideas!

  2. exactly what you would suspect. I really just wanted a quick sugar hit and these worked perfectly. We didn’t have any milk so I replaced it with water and it worked just as well. Honestly, I wouldn’t waste a measuring utensil. It’s just a consistency thing. I had to add a little more water and PB. They are really thick so I would recommend a cold glass of milk or something to go with but they are yummy for sure!

  3. Yum-my! Just made these for the 1st time, …really for my grandmother’s sweet tooth and oh boy are these delicious! …and versatile. I’ll make them with almond flour next time. I tried the freezer option with a small swig of almond milk, it hit the spot. ๐Ÿ˜‰

  4. We make these every other day and call them “protein bites”.
    1/2 C flour of your choice
    1/3 C sweetener of your choice
    1 C nut btr of your choice
    smash it in a square dish, wait an hour in freezer and cut into lil squares and continue to keep them in freezer.
    Variation: I add cinnamon and crushed carob chips.

    1. You would need to counter that with a dry ingredient. Other than extra brownie mix I’m not sure what else you could add.

  5. Hi if I was to make these for people that don’t like peanut butter could I substitute the peanut butter for choc chip or is there anything else I could substitute it for?

    1. Not with this recipe sadly. The peanut butter is what holds it together. You could use another type of nut butter of your preference, but without that the recipe will not work. Sorry!

    1. Hi Janet! Are you able to use a Sunflower Seed butter? That might work out in the recipe. Or you could even blow everyone’s minds by using Cookie Butter instead! ๐Ÿ™‚

  6. What should I so to make more. My daughter is making some for her DRAMA class and she has 36 students in her class. What should I do. HELP!!! ๐Ÿ˜‰

    1. So fun!! I love this recipe, so simple to make. For 36 kids, I’m sure maybe some of them will want more than one so I would say just double up! Grab two brownie mixes and double the amount of peanut butter and milk. Or if you want to make a little less, the recipe is for a 9×13 pan of brownie mix, grab one thats for a small square pan of brownies and one of the 9×13 and you should end up with just about 36 brownie bites. Let me know how it goes!
