These easy Ground Beef Burrito Bowls are a quick, flavorful dinner made with seasoned beef, rice, beans, and all your favorite toppings. Perfect for busy weeknights or meal prep, they’re customizable, budget-friendly, and family-approved!

Burrito Bowls = Weeknight Win
We’re in our burrito bowl era over here, and honestly? I don’t see us leaving any time soon. These Ground Beef Burrito Bowls are fast, filling, flavorful, and easily customizable—which is exactly what I need on a busy weeknight when everyone’s hungry and I’ve got approximately 6.5 minutes to get dinner on the table.
This is the kind of meal that hits all the right notes: a hearty, seasoned beef base, fluffy rice, fresh toppings, and whatever extras you love most (looking at you, guac and sour cream). My kids can build their bowls exactly how they want—more cheese for one, no tomatoes for another, and my husband adds every spicy thing he can find in the fridge. It’s dinner, but make it choose-your-own-adventure.

Ground Beef Burrito Bowls
Ingredients
Chipotle Ground Beef
- 1 pound ground beef
- 1 tablespoon tomato paste
- 1 tablespoon apple cider vinegar
- 1 teaspoon chipotle chili powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- ¾ teaspoon salt
- ¼ teaspoon oregano
- ½ lime juiced
Cilantro Lime Rice
- 1 tablespoon avocado oil
- 1 cup long grain white rice
- 2 cups chicken broth low sodium
- ¾ teaspoon salt
- ½ teaspoon lime zest
- ½ teaspoon fresh lime juice
- ¼ cup fresh cilantro chopped
Toppings
- black beans drained and heated
- ½ cup tomatoes diced
- ⅓ cup Monterey Jack cheese grated
- 1 cup green lettuce sliced
- ½ cup pico de gallo
- ½ cup sour cream
- diced avocado or homemade guacamole
- fresh cilantro
Instructions
Prepare the Rice
- Heat the oil in a medium size skillet or pot that has a lid.
- Add the rice and stir to coat in the oil. Cook until the rice is just beginning to toast, it should have a brighter white appearance.
- Pour in the broth, then stir in the salt. Bring this mixture to a simmer. Cover with the lid and let this cook for 20 minutes.
- Remove the rice from the heat, keeping the lid on and allow to sit for at least 10 minutes.
- Remove the lid, fluff the rice up and then stir in the fresh lime zest, juice and chopped cilantro.
Prepare the Meat
- Heat a medium size skillet over medium heat, add the ground beef. Break up the beef with a wooden spoon while cooking. Cook the ground beef until browned and no longer pink.
- Drain any excess grease from the skillet. Then return to the stove and reduce the heat to low.
- Add the tomato paste, apple cider vinegar, and spices. Stir to combine all together and allow to cook for an additional 2-3 minutes. Squeeze the lime juice over the meat.
Assemble the Bowls
- Layer the rice, meat, beans and add any toppings that you prefer to make your bowl.
