This Avocado, Tomato, and Cucumber Salad is fresh and loaded with flavor thanks to a homemade cilantro lime vinaigrette. It’s the kind of salad that pairs beautifully with grilled meats, tacos, or even a handful of tortilla chips.

This Avocado, Tomato, and Cucumber Salad is Summer in a Bowl
Some salads are just side dishes, and some steal the whole show. This one? It’s the kind of salad you find yourself eating straight from the bowl with a fork, long after dinner is over.
I love how the creamy avocado, juicy tomatoes, and crisp cucumbers balance each other, but the real star is the cilantro lime vinaigrette—it’s bright, tangy, and exactly what a fresh salad like this needs.
Ingredients
Step-By-Step Instructions
- Prepare the salad by chopping up the cucumber, and grape tomatoes. Combine these in a small serving bowl. Then add the avocado.
- Combine the ingredients for the dressing (evoo, apple cider vinegar, salt, garlic, diced cilantro, lime juice, and honey).
- Stir together with a whisk to fully incorporate together.
- Drizzle the dressing over the top of the salad, and gently mix.
🥑 Adding in the avocado last and only stirring to coat it with the dressing helps to prevent mashing it up.
Recipe Tips
Use ripe but firm avocados so they hold their shape in the salad.
English cucumbers are great for this recipe because they have thin skin and fewer seeds.
Adjust the seasoning to your taste—if you love extra bite, add more lime juice!
Let it sit for a bit before serving to really let the flavors develop.
Serving Suggestions
- With Grilled chicken, steak, or shrimp
- In tacos, burritos, or quesadillas
- As a topping for grilled fish or inside a grain bowl
- With tortilla chips for a fresh and chunky dip
Storage Directions
This salad is best enjoyed fresh since avocado can brown over time. If you need to store leftovers, press a piece of plastic wrap directly onto the surface of the salad before refrigerating. It will keep for up to 1 day.
