Some salads are just side dishes, and some steal the whole show. This one? It’s the kind of salad you find yourself eating straight from the bowl with a fork, long after dinner is over.

I love how the creamy avocado, juicy tomatoes, and crisp cucumbers balance each other, but the real star is the cilantro lime vinaigrette—it’s bright, tangy, and exactly what a fresh salad like this needs.

Step-By-Step Instructions

Chopped tomato, cucumber,
  1. Prepare the salad by chopping up the cucumber, and grape tomatoes. Combine these in a small serving bowl. Then add the avocado.

  1. Combine the ingredients for the dressing (evoo, apple cider vinegar, salt, garlic, diced cilantro, lime juice, and honey).

  1. Stir together with a whisk to fully incorporate together.

  1. Drizzle the dressing over the top of the salad, and gently mix. 

🥑 Adding in the avocado last and only stirring to coat it with the dressing helps to prevent mashing it up.

Recipe Tips

Use ripe but firm avocados so they hold their shape in the salad.

English cucumbers are great for this recipe because they have thin skin and fewer seeds.

Adjust the seasoning to your taste—if you love extra bite, add more lime juice!

Let it sit for a bit before serving to really let the flavors develop.

Ingredients  

Salad

  • ½ English cucumber halved and sliced (approximately 2 cup)
  • 5 ounces grape tomatoes sliced (approximately 1 cup)
  • 1 ripe avocado cubed

Cilantro Lime Vinaigrette

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoons apple cider vinegar
  • 2 cloves garlic minced
  • ¼ cup cilantro diced
  • ½ lime juiced
  • ½ teaspoon honey
  • pinch salt

Instructions 

  • Prepare the salad by chopping up the cucumber, and grape tomatoes. Combine these in a small serving bowl. Then chop up the avocado and add. There’s no need to stir the avocado yet, this helps to avoid unnecessarily mashing it.
  • In a small jar combine the ingredients for the dressing (evoo, apple cider vinegar, salt, garlic, diced cilantro, lime juice, and honey). Place the lid on the jar and shake or stir together with a whisk to fully incorporate together. 
  • Drizzle the dressing over the top of the salad, and gently mix.
