Thanks to the addition of cream cheese mixed in the batter, these cookies bars have a decadent cookies and cream taste throughout. These Oreo Cookie Bars feature a chewy, cookie bar base that is mixed with cream cheese and vanilla giving a sweet cream flavor. Then with the addition of white chocolate chips and crushed up chocolate cookie sandwiches the cookies and cream flavor shines through. These bars are:

Ingredients & Substitutions:

  • Sugar: You can use a white granulated sugar or an organic cane sugar.
  • Unsalted Butter: You can substitute with salted butter, coconut oil, or ghee as needed.
  • All Purpose Flour: You can substitute with a gluten free 1:1 flour.
  • Cream Cheese: Full fat or light cream cheese will work in this Oreo bar recipe, however the fat content will give a richer taste.
  • Oreos: You can use Oreo brand cookies in any flavor you want, or use another brand of chocolate sandwich cookies.

How to Make Oreo Bars:

Prep: Note that this recipe starts with room temperature cream cheese and butter so be sure to let them both sit out for an hour before mixing the dough. Preheat the oven to 350 degrees F. Prepare a 9×9 baking pan by lining it with parchment paper and then set aside.

Beat Butter: In a medium-sized bowl, beat the butter and cream cheese together until smooth using a hand or stand mixer.

Cream Together: Add the sugars and cream together with the butter mixture.

Mix Wet Ingredients: Pour in the vanilla extract and add the eggs. Mix until smooth and creamy.

Add Dry Ingredients: Add the flour, baking powder, and salt. Mix on low speed until the batter comes together. It will be sticky. Fold in the white chocolate chips and 1 cup of the chopped Oreos.

Add to Baking Pan: Scoop the batter into the prepared baking pan. The batter will be sticky. Spread it out into an even layer. The batter will be sticky. Spread it out into an even layer.

Top & Bake: Top with the remaining chopped Oreos, gently pressing into the batter. Bake for 26-28 minutes until the edges start turning golden.

Cool: Remove from the oven and let the bars cool in the baking pan for 30 minutes, then remove from the pan by pulling up the parchment paper and set on a wire rack to continue cooling for another 2-3 hours before cutting.

My favorite way to enjoy these homemade Oreo bars is just one their own. Of course they would be nice with a scoop of vanilla ice cream also.

Store:

Store these Oreo bars in a sealed container at room temperature for 3-4 days.

Freeze:

You can freeze these bars before cutting or as individual slices. First, let the bars cool completely. Then, wrap the unsliced bars or slices in plastic wrap and store in an airtight container in the freezer for up to 1 month. Thaw at room temperature when ready to serve.

Ingredients  

  • ¾ cup unsalted butter room temperature
  • 4 ounces cream cheese room temperature
  • ¾ cup white sugar
  • ¼ cup light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • cup white chocolate chips
  • cup chocolate cookie sandwiches chopped

Instructions

  1. Pulled together easy. And was tasty. The texture was interesting as I expected more like cheesecake, but it wasn’t – it was drier. I have an 8×8, at 30 min it was still a bit too mushy so did like 5 or 8 min. Can’t remember now. That may be part of why it was drier. Regardless, being easy and tasty means it will probably be made again when I need a fun / different treat to bring somewhere.
