Easy Sheet Pan Meal for The Family

Sheet pan tostadas.

Nothing is better than simple meals when it comes to feeding the family during the week.

These tostadas are baked on a sheet pan with simple toppings making this a weeknight winner! Baked corn tortillas crisp up and get topped with refried beans, a simple ground chicken, melty cheese, and fresh tomato and lettuce.

Be ready for this one to become a regular meal!

Ingredients  

  • 12 street size corn tortillas
  • avocado oil spray

Ground Chicken

  • 1 pound ground chicken
  • ¾ teaspoon salt
  • 1 teaspoon granulated garlic
  • 1 teaspoon granulated onion
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • ½ teaspoon paprika
  • ¼ teaspoon dried oregano
  • 2 tablespoons fresh cilantro chopped
  • juice from 1/2 lime

Toppings

  • 1 16 ounce can refried black beans warmed
  • 1 cup Monterey Jack cheese grated
  • 1 cup lettuce shredded
  • ½ cup tomato diced
  • ¼ cup crema

Instructions 

  • Preheat oven to 450 degrees F. 
  • Heat a medium size skillet over medium heat. 
  • Add the ground chicken to the skillet, then add the seasonings (salt, garlic powder, onion powder, cumin, chili powder, paprika, and oregano).

  • Break apart the meat while it cooks with the seasonings. Cook for 5-7 minutes until the meat is fully cooked through (will look white and no longer pink). 
  • Stir in the chopped cilantro and fresh lime juice.

  • Spray a large baking sheet with avocado oil, place the corn tortillas on the baking sheet, spray the tops of the tortillas with additional avocado oil. Bake for 5 minutes until the tortillas look golden, flip and then bake for an additional 3-5 minutes. (Keep an eye on them during this process, they can bake very quickly).

  • Spread refried beans on each tortilla, top with the cooked ground chicken, and then sprinkle with the grated cheese.

  • Bake for 3 minutes or just until the cheese is melted. 
  • Remove from the oven and top with shredded lettuce, diced tomato, and drizzle with crema.

Notes

Storage: 
For best results, store items separately. 
  • Baked tostadas can be stored in an airtight container at room temperature for up to 5 days. 
  • Cooked chicken can be stored in a sealed container in the refrigerator for up to 5 days. 
  • Store tomato and lettuce in separate containers in refrigerator.
