Mocha Overnight Oats.  I think by now you know of my love for oatmeal for breakfast.  I figure this is a good and healthy obsession to have.  My little ones love their oatmeal every morning too.  I’m going to be honest with you though, before this little recipe here, I had never made overnight oats before.  I work at home and don’t have an issue with getting my oatmeal made in the mornings.  But I can definitely see the appeal of making overnight oats.  I was able to just toss the ingredients into this little jar, shake it up, and let it sit.  It really only took a few minutes of time.  And it is kind of nice having breakfast already made for the day.  So I think I may be falling in love with this whole concept of overnight oats.  Why do I resist trend?  It usually becomes a trend for a reason right?  Lesson learned.

In all seriousness though.  What is better than oatmeal for breakfast?  Oatmeal with coffee.  Enter: Mocha Overnight Oats.  The combination of coffee and chocolate is sure to get me going in the morning.  Plus, I used Silk Unsweetened Vanilla Almond Milk from Tom Thumb. Honey as my sweetener, which can also be swapped out with agave or maple syrup if you prefer.  But this makes this breakfast recipe dairy free and refined sugar free.  Making this a healthy option for starting the day.

These Mocha Overnight Oats are the perfect combination of coffee and chocolate to get you going in the morning! Best of all, this breakfast can be prepared the night before!
Jar filled with oats filled with almond milk and coffee.

Ingredients  

  • 1 cup old fashioned rolled oats
  • 1 cup Vanilla Almond Milk
  • ½ cup brewed coffee
  • 1 tbsp cocoa powder
  • 2 tbsp honey/agave/maple syrup

Instructions 

  • Pour oats into a jar or plastic container that comes with a lid.
  • Pour in Vanilla Almond Milk, brewed coffee, cocoa powder, and your choice of honey/agave/maple syrup.
  • Put the lid on tightly and shake to combine.
  • Place the container of oats into the refrigerator and allow to chill overnight or for at least 8 hours.
  • Once chilled, the oats will be softened and have absorbed most of the liquid, serve and enjoy!

Notes

Time includes chilling in refrigerator overnight.
