Mocha Overnight Oats.  I think by now you know of my love for oatmeal for breakfast.  I figure this is a good and healthy obsession to have.  My little ones love their oatmeal every morning too.  I’m going to be honest with you though, before this little recipe here, I had never made overnight oats before.  I work at home and don’t have an issue with getting my oatmeal made in the mornings.  But I can definitely see the appeal of making overnight oats.  I was able to just toss the ingredients into this little jar, shake it up, and let it sit.  It really only took a few minutes of time.  And it is kind of nice having breakfast already made for the day.  So I think I may be falling in love with this whole concept of overnight oats.  Why do I resist trend?  It usually becomes a trend for a reason right?  Lesson learned.

In all seriousness though.  What is better than oatmeal for breakfast?  Oatmeal with coffee.  Enter: Mocha Overnight Oats.  The combination of coffee and chocolate is sure to get me going in the morning.  Plus, I used Silk Unsweetened Vanilla Almond Milk from Tom Thumb. Honey as my sweetener, which can also be swapped out with agave or maple syrup if you prefer.  But this makes this breakfast recipe dairy free and refined sugar free.  Making this a healthy option for starting the day.

Now, April isn’t just my birthday month, which is a pretty big deal, but it’s also Earth Month!! Eating healthy is one thing, but knowing that your groceries are being responsibly made is another!  Did you know that producing a half gallon of plant-based beverages requires on average 77 percent less water than producing the same amount on conventional dairy milk.  Also, Silk  products are all enrolled in or verified by the Non GMO Project’s Product Verification Program (PVP).

What does all of that mean? Well, what I try to do every day is make good choices.  That’s what I tell the hubs.  When faced with a question of what to eat I try to make a better choice.  Every little choice we make all adds up during the day. Especially on days that we go grocery shopping!  Every Cart Matters! Every item that we put in our carts matters.  I know whatever I put in my cart gets eaten by my family or me.  So just by making a small choice to purchase products that are responsibly made we can make a big difference in our planet, and our diets!
