Guess who isn’t a fan of eating a lot of green veggies in our house?  If you said the 8 year old you would be correct.  But guess who absolutely loves mac and cheese?  If you said the 8 year old again you are correct yet again!!  This dish is the perfect solution to that little problem.  Seriously though, who doesn’t love veggies when they are smothered and covered in cheese?  I know that’s my preferred method to eat just about anything.

I’ve been craving anything and everything spinach & artichoke lately.  I’m probably the only person in the world who craves artichokes mixed with spinach.  In my defense though, I only really want them with cheese.  I keep seeing all these people posting pictures of spinach & artichoke dips and I’ve been wanting to make one for weeks now!  I just haven’t gotten around to it.  So I decided to make it into a dinner form instead that I could share with my lovely little ladies.  And they all loved it!

The best part about this dish?  It’s easily made in one pot.  Which means fewer dishes for whoever is lucky enough to have that chore in your household.  Sadly, part of my marriage vows included that I would always do the dishes.  Not really of course.  But it was a discussed topic with the understanding going in that the hubs doesn’t do dishes.  Bless him though, he does try, he was helping me out the other day and did do some dishes.  Then I heard him gagging.  He can’t stand when the food gets left on the plate and then gets wet and it’s all soggy.  Poor guy.  He did his best. Did I completely ruin your appetite yet?

Now back to this delightfully cheesy dish.  This dish is almost just as easy as making mac and cheese from the box.  The only added steps is defrosting the spinach and opening a can of artichokes!  So simple and easy.  Plus we have the added benefit of using real cheese, and sneaking in some yummy vegetables to whoever is lucky enough to eat this.

This dish definitely helped curb my craving for spinach and artichokes.  Now it’s among the favorites of the household.

{One Pot} Spinach & Artichoke Mac and Cheese

This creamy Spinach & Artichoke Mac and Cheese is all made in one pot, and is the perfect cheesy dish to sneak in some veggies.

Ingredients  

  • 8 oz elbow macaroni noodles
  • 2 cups monterey Jack cheese shredded
  • 4 ounces Parmesan cheese grated
  • 1 (14 ounce can) artichoke hearts drained and chopped
  • 10 ounces frozen spinach thawed and drained
  • ¼ cup milk
  • 3 tbsp butter
  • ½ tsp salt
  • ¼ tsp pepper
  • red pepper flake topping optional
  • Additional Parmesan cheese for topping optional

Instructions 

  • In large pot bring water to a boil and add in the macaroni noodles. Boil while stirring occasionally for about 10-12 minutes until soft. Drain the water and return the noodles to the pot. Reduce the heat to low.
  • Add in the milk, butter, and cheese. Stir until well combined and the cheese is completely melted.
  • Add in the spinach (make sure you drained as much water as you can) and artichoke hearts. Stir until well combined. Add salt and pepper to taste.
  • Top with additional toppings as desired and enjoy!

  1. Made this on a cold wintry day in Pittsburgh… Yum!
    I halved the recipe because I was skeptical( I shouldn’t have!?) I used Gouda and cheddar because that’s what I had on hand and added paprika, Dijon mustard and mustard powder. I also used fresh spinach and frozen artichokes( boiled and diced)
    Very yummy!

  2. This would make a great pasta salad,leave out the cheese and milk,use raw spinach and chill for a few hours.
