This easy tamale pie is classic Tex-Mex comfort food. Featuring ground beef, enchilada sauce, and a tamale-inspired cornbread base, this recipe is a great family dinner idea for busy weeknights.
Cornmeal | Flour Baking Powder | Egg Sour Cream | Creamed Corn Milk | Enchilada Sauce Chili Powder | Salt Cumin | Garlic Powder Onion Powder | Ground Beef Oregano | Shredded Cheese
Mix together the dry ingredients in a large bowl. Add the egg, sour cream, corn and milk to the dry ingredients and mix.
Pour the cornbread mixture into a prepared baking dish. Bake for about 25 minutes. Cook ground beef, drain, and stir in seasonings.
Poke the cornbread with a fork all over and drizzle with enchilada sauce. Add the ground beef on top, then top with the shredded cheese.
Bake again for another 15 minutes until the top is melted and bubbling. Allow to cool for a few minutes before serving.
