Add the heavy cream and chocolate chips to a heat safe bowl. Heat in microwave for about 2 minutes. If using stovetop then heat the cream on the stovetop until just starting to simmer. Remove from heat, pour over the chocolate chips and let sit for a few minutes.
Stir until chocolate is completely melted. Add in the vanilla extract. Stir to combine.
Place the bowl in the fridge to chill for about 30-45 minutes until set. Beat with mixer until light and fluffy.
Hull the strawberries and cut the very bottom tip off so that the strawberries will stand up.
Add the chocolate mousse to a piping bag and pipe into the hulled strawberries.
Store in the refrigerator if not serving immediately. Can save in the fridge for one day before serving.
