Ingredients

  • 1 lb ground beef
  • 2 tbsp tomato paste
  • 1 (15 ounce) can tomato sauce
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tbsp paprika
  • 1 tbsp onion powder
  • ½ tsp garlic powder
  • 1 tsp ground cumin
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 cups frito chips
  • ½ cup shredded cheddar cheese
  • ½ white onion diced

Optional Toppings

  • sour cream
  • sliced jalapeños

Instructions

  • Cook the ground beef in large pot or dutch oven over medium heat, until fully cooked, no longer pink, for about 7 minutes.
  • Drain the grease. Return the pot to the stove.
  • Add the tomato paste, tomato sauce, and beef stock. Stir to combine.
  • Add the seasonings. Cover and simmer over medium heat for the next 10 minutes.
  • In bowl or plates layer the Frito chips, top with some chili, cheese, onion and any additional toppings.
