Agua de Jamaica (Hibiscus Tea)
This refreshing Agua de Jamaica or Hibiscus Tea is a popular Mexican drink. Made from dried hibiscus flowers this cold drink has a sweet and tart flavor and is ready in less than 20 minutes!

- 8 cups water divided
- 1 cup sugar
- 1 cup dried hibiscus flowers
- 2 tbsp lime juice
Pour water into a medium size saucepan.
Add the sugar and stir to combine.
Heat over medium heat until water just begins to boil, stirring occasionally until the sugar completely dissolves.
Remove from heat and add the dried hibiscus, stir to coat in the water. Let this sit and steep for at least 15 minutes.
Pour hibiscus tea through a fine mesh strainer into a large pitcher, discarding the flowers.
Add the remaining water to the pitcher, then add in the lime juice, stir and taste. Adjust lime juice to taste.
Serve cold over ice. Garnish with mint and lime as desired.
