Strawberry Salad with Poppyseed Dressing

This beautiful summer Strawberry Poppyseed Salad is packed with fresh juicy strawberries, pecans, feta and drizzled with a healthy poppyseed dressing. Easy, colorful, and healthy this salad is always a crowd pleaser!

Ingredients

Poppyseed Dressing

Strawberry Salad

  • 2 cups ripe strawberries
  • 8 cups mixed spring greens
  • ½ red onion
  • ½ cup pecans chopped
  • ½ cup feta crumbled

Instructions

  • Prepare a medium size bowl with cold water, thinly slice the red onion and place in the bowl to soak while preparing the salad. (This helps to mellow the flavoring)
  • Prepare the strawberries by washing and slicing. Set aside
  • Make the dressing by combining all of the ingredients in a small jar, close the lid and shake to combine. 
  • To prepare the salad, layer the greens, top with the sliced strawberries, red onions, chopped pecans, feta crumbles. 
  • Drizzle with the salad dressing and serve immediately.

Notes

Depending on thickness of yogurt, you may need to adjust by adding milk of choice to get desired consistency.
