Cherry Pie Bars

Cherry Pie Bars! Cherry Pie is made extra easy by turning the rich and buttery crust into bars layered with a sweet and tart cherry pie filling. Drizzle with a little cream cheese glaze and you will have a new favorite dessert you will want to make again and again!

Ingredients

Cherry Pie Bars

  • 1 cup unsalted butter softened
  • cup white granulated sugar
  • tsp baking powder
  • ½ tsp salt
  • 3 large eggs
  • 1 tsp vanilla extract
  • 3 cups all purpose flour
  • 1 (21 ounce) cherry pie filling

Cream Cheese Glaze

  • 4 ounces cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla
  • 4 tbsp milk

Instructions

Cherry Pie Bars

  • Preheat oven to 350°F. Spray a 9x13 baking pan with non stick spray and set aside.
  • In a large mixing bowl beat the butter until smooth and creamy.
  • Add in the sugar and mix until light and fluffy. Add in the baking powder and salt.
  • Add in the eggs and vanilla extract, mix until combined. Scrape the side of the bowl as needed.
  • Mix in the flour one cup at a time until combined.
  • Set aside about 1 cup of the dough and with the remaining dough press into the bottom of the baking pan. Dough will be slightly sticky. Just press it down with a rubber spatula or fingers.
  • Bake for about 10 minutes.
  • Remove from oven and top with cherry pie filling.
  • Top with spoonfuls of remaining dough.
  • Bake for another 30 minutes until the top is just turning golden brown.
  • Remove from the oven and allow to cool for about 10 minutes prior to cutting into bars and serving. Top with cream cheese glaze.

Cream Cheese Glaze

  • Place all ingredients into a small mixing bowl and stir until smooth and creamy. Add milk or powdered sugar as needed to get desired consistency.
