Cherry Pie Bars
- 1 cup unsalted butter softened
- 1¾ cup white granulated sugar
- 1½ tsp baking powder
- ½ tsp salt
- 3 large eggs
- 1 tsp vanilla extract
- 3 cups all purpose flour
- 1 (21 ounce) cherry pie filling
Cream Cheese Glaze
- 4 ounces cream cheese softened
- 1 cup powdered sugar
- 1 tsp vanilla
- 4 tbsp milk
Cherry Pie Bars
Preheat oven to 350°F. Spray a 9x13 baking pan with non stick spray and set aside.
In a large mixing bowl beat the butter until smooth and creamy.
Add in the sugar and mix until light and fluffy. Add in the baking powder and salt.
Add in the eggs and vanilla extract, mix until combined. Scrape the side of the bowl as needed.
Mix in the flour one cup at a time until combined.
Set aside about 1 cup of the dough and with the remaining dough press into the bottom of the baking pan. Dough will be slightly sticky. Just press it down with a rubber spatula or fingers.
Bake for about 10 minutes.
Remove from oven and top with cherry pie filling.
Top with spoonfuls of remaining dough.
Bake for another 30 minutes until the top is just turning golden brown.
Remove from the oven and allow to cool for about 10 minutes prior to cutting into bars and serving. Top with cream cheese glaze.
