{Goat Cheese + Sun Dried Tomato} Mashed Potatoes

These super creamy mashed potatoes are loaded with goat cheese, sun dried tomato, and topped with some fresh chopped chives.

Ingredients

  • 4 lbs russet potatoes peeled and chopped
  • ¼ cup milk
  • 3 tbsp butter
  • ½ cup sour cream
  • 2 oz goat cheese
  • 1 tsp salt
  • ¼ cup sun dried tomatoes chopped (if kept in oil blot off as much oil as possible)
  • optional toppings-Chives

Instructions

  • Add the potatoes to a large pot of water and bring to a boil over medium heat. Allow to boil for about 20 minutes or until the potatoes are soft and easily mashed with a fork.
  • Drain the water from the potatoes and add the potatoes to a large mixing bowl.
  • Add the milk, sour cream, butter, and mix over medium speed until the potatoes are smooth and creamy. (I used my KitchenAid Mixer, if you don't have a mixer you can use a masher).
  • Add in the goat cheese and salt, mix until well combined.
  • Lastly stir in the sun dried tomato until fully combined.
  • Add additional ingredients as needed to get to desired consistency. Salt and pepper to taste.
