TEXAS BREAKFAST TACOS

A breakfast staple in Texas restaurants  these Breakfast Tacos are easily made at home! Tortillas layered with potatoes, crispy bacon, soft scrambled eggs and all the toppings!

KEY INGREDIENTS

Russet Potatoes Paprika Eggs Milk Bacon Flour Tortillas OPTIONAL TOPPINGS Cheddar Cheese | Cilantro Grape Tomatoes | Salsa

Dice the potatoes and cook in oil with spices and seasonings until they are soft on the inside and nice and crispy on the outside.

POTATOES

In the same skillet add the bacon and allow to cook for about 5-7 minutes until crispy. Remove to a plate and dry with paper towels. Cut slices in half.

BACON

Beat the eggs with milk & salt and pepper. Pour the egg mixture into a prepared skillet. Stir occasionally while the eggs cook to scramble them.

SERVING SUGGESTIONS

Layer the tortillas with the breakfast potatoes, bacon and scrambled eggs. Top with any additional toppings. Serve warm and enjoy.
