These Roasted Potatoes are seasoned with a blend of Tex Mex seasonings and fresh cilantro. Baked at a high temperature to ensure crispy skins on the outside and a creamy texture on the inside.
Yukon Gold Potatoes
Wash and pat dry the potatoes. Slice the potatoes into 1/2 pieces. Add the potatoes to a bowl, drizzle with oil, and add season. Stir to coat fully.
Spread the potatoes onto the prepared baking sheet in an even layer making sure to give some space between for even baking.
Bake at 400°F for 40 minutes, making sure to flip around half way to ensure even browning. Potatoes should be fork tender.
Serve with queso on the side for dipping or drizzling!
