Peel, chop and cube the potatoes then add to the pot. Cover with water, add salt then bring to a boil. Cook until they are fork tender, approximately 15-20 minutes.
Drain and rinse the potatoes. Add them back into the empty pot on the stovetop. The warm pot helps dry off the potatoes. In a small bowl combine the ingredients for the dressing: mayonnaise, mustard,relish, salt and pepper.
Allow potatoes to cool about 20 minutes and add them to a large bowl. Add in diced hard-boiled eggs. Gently stir in dressing and mix until the potatoes are coated in the dressing.
