SOUTHERN  POTATO SALAD

This creamy southern potato salad is perfect for all your Summer BBQs. Made with tender potatoes, hard boiled eggs, dill pickle relish, in a tangy mayonnaise, mustard based dressing.

INGREDIENTS

Potatoes Eggs Mayonnaise Yellow Mustard Dill Pickle Relish Salt And Pepper

Peel, chop and cube the potatoes then add to the pot. Cover with water, add salt then bring to a boil. Cook until they are fork tender, approximately 15-20 minutes.

INSTRUCTIONS

Drain and rinse the potatoes. Add them back into the empty pot on the stovetop. The warm pot helps dry off the potatoes. In a small bowl combine the ingredients for the dressing: mayonnaise, mustard,relish, salt and pepper.

Allow potatoes to cool about 20 minutes and add them to a large bowl. Add in diced hard-boiled eggs.  Gently stir in dressing and mix until the potatoes are coated in the dressing.

Cover and chill for at least 2 hours before serving.
