MEXICAN PICADILLO
This quick and easy dinner recipe comes together with minimal ingredients. Ground beef and potatoes are simmered in a tomato sauce. Serve this dish up with some rice and fresh flour tortillas for a complete meal.
ground beef onion green bell pepper potato garlic tomato sauce beef broth salt ground black pepper cumin ground coriander bay leaf
INGREDIENTS
Cook Ground beef until mostly Brown
INSTRUCTIONS
Add in diced onion, green bell pepper, and potatoes.
Pour in tomato sauce & beef broth. Add in seasonings:
Bring to a simmer and cook for 10 minutes
ALMOST THERE
Remove lid, stir, and continue cooking 10 more minutes or until potatoes are softened
Serve warm with flour tortillas and rice.
Additional Vegetables: if adding additional veggies add them in with the tomato sauce Let simmer to soften and absorb flavor.
Tips
Tomatoes: You can use fresh Roma tomatoes instead of tomato sauce.
Potatoes: You can use russet or gold potatoes.
