BLACK BEAN SOUP

This hearty black bean soup recipe is loaded up with veggies! Thick and creamy, this soup is quick and easy to put together.

KEY INGREDIENTS

yellow onion | jalapeño garlic | cumin | coriander Mexican oregano | paprika black beans | chicken broth salt | pepper | lime | cilantro

Add onion and jalapeño to a dutch oven with oil. Cook until soft.

Add in the garlic and cook for 30 seconds. Add the seasonings. Stir to combine.

Add beans and broth. Stir then cover and cook for 15 minutes.

Mash beans to thicken the soup (or use an immersion blender.)

Add lime juice, cilantro, salt, pepper and red pepper flakes if desired.

SERVE

Serve with bread or cornbread on the side. A simple garden salad with some homemade ranch dressing would also be a hit.
