They also belong with pistachios. It’s a match made in foodie heaven. Mix it with some avocado and you will begin to feel as though life is perfect. Absolutely perfect just the way it is. Now top it all off with some feta and your mind will be absolutely blown. You could also go the route of goat cheese if you desire. And I’m kind of thinking that if you love goat cheese then you absolutely need to do it.
I feel like I’ve been in my own world lately. Cut off from social media and blog life. Even though it’s only been a few days that I’ve been slightly MIA. I feel like I’m completely out of the loop and off track. 38 weeks pregnant, and guess what happened? A pipe burst in the wall of our home. Where? Right next to the little kids room and where the baby will be sleeping very shortly. Of course right?
So it’s been a whirlwind of people coming over and giving estimates, fixing things, ripping up flooring, setting up about 10 fans. I can’t even remember what life is like without the constant humming (loud humming) of fans as they dry the walls and the floor boards.
Homeownership right? Welcome to it. The hubs and I only bought this house about 3 months ago. It’s our first big issue we’ve had to deal with. I’d say other than me just being short on patience due to pregnancy we’ve handled it well. And the little kids have done well with being relocated since their room is currently tore apart.
And I’ve still been cooking, swollen ankles and all. A girl has to eat right?
Plus slicing fruits and veggies into awkwardly skinny slices is oddly calming to me right now. Taking my time to layer my avocado just so gives me a sense of accomplishment and joy.
Not to mention just looking at the strawberries makes me happy to be alive.
The creamy poppyseed dressing on this salad is similar to the poppyseed dressing that I used on my other Strawberry Salad with Poppyseed Dressing. (what is it with me and strawberries in my salad?)
But this dressing is made lighter by using yogurt to make it creamy, and I cut out the sugar and used Agave instead. You could also use honey, but you will notice a slight honey taste. Which is fine by me and I’m sure you would agree that honey is pretty much pure happiness in a bottle.
The salty pistachios paired with the juicy strawberries and creamy avocado drizzled with the sweet and tangy poppyseed dressing is enough to make me forget about the fact that my house is literally torn apart and that I have a baby coming in two weeks or less.

Strawberry Avocado and Pistachio Salad with a Creamy Poppyseed Dressing
Creamy Poppyseed Dressing
- 2 cups baby spinach
- ¼ cup pistachios
- ½ cup sliced strawberries
- ¼ cup crumbled feta
- 1 avocado sliced
Creamy Poppyseed Dressing
- Combine all the ingredients into a large jar or measuring cup. Stir to combine or shake until well combined. Set aside.
- Prepare the Salad by layering the spinach, strawberries, feta, pistachios and avocado. Drizzle with the creamy poppyseed dressing.
