Chicken Parmesan Casserole made in the slow cooker using ONLY 7 ingredients! Perfect family dinner or comfort food!
Chicken Parmesan Casserole. In the slow cooker. Easy. Simple. Amazingly tasty! Even the picky one who refuses to eat my Spaghetti & Meatballs (how dare she!) loved this dish! Which means it most likely will become a repeat in our house. Even my little 2 year old came running to the kitchen for seconds. Winner winner Chicken Parmesan dinner!!
Is there anything better than having dinner cook on it’s own all day while you get everything else done? With our family of six anything that I can do to save time is wonderful!
We always do our grocery shopping together. The whole fam. Every week we head to one of the local markets, one of our favorites is Kroger. Grocery shopping for us is a grand adventure. Shoot, anything involving all of the kids is a grand adventure! The two older girls bicker non stop. The two year old roams around grabbing any Frozen merchandise she can get her hands on, and the baby growls and chews on his teething ring.
And while there looking for the usual weekly list of items, I saw the Bertolli® Sauces part of Kroger’s Taste of Italy program. One of my favorite comfort foods are pastas! In the midst of grocery shopping chaos I had the urge to curl up on the couch in my comfy clothes and a healthy portion of my favorite Tuscan-Inspired Feast, after bedtime. Meaning it would be quiet. Just me and the hubs. So of course I snagged the sauce. Duh.
Now while my daydream of indulging in a favorite meal of mine didn’t quite happen. I did make a wonderful family dinner that we all enjoyed. Together. And that’s better!! Just don’t tell anyone, I snuck in a carton of ice cream to that grocery cart. For after bedtime. Just for me.
This dish is bursting with tender, flavorful chicken. I let it simmer in the slow cooker for four hours on high with the Bertolli® Tomato & Basil sauce, some chicken stock and chopped garlic and onions. When the chicken was done I took it out and placed it on a plate, shredded it and added it back to the slow cooker with some noodles. About 20 extra minutes in the slow cooker and the noodles were perfect! Added a bit of salt to the dish, stirred it. And that’s all!

{Slow Cooker} Chicken Parmesan Casserole
Ingredients
- 1 pound chicken breasts, boneless & skinless
- 4 cups chicken broth, low/no sodium
- 1 (24 ounce jar) Tomato & Basil marinara sauce
- ½ cup onion, chopped
- 2 cloves garlic , minced
- 1 pound pasta noodles
- 1 (15 ounce can) diced tomatoes
- 1 cup parmesan cheese, grated

Instructions
- Pour the marinara sauce and chicken stock into the slow cooker. Add the chicken, diced onion and minced garlic. Cook over low heat for 6-8 hours, or high heat for 4 hours.
- Remove the chicken from the slow cooker, place it on a plate and shred. Chicken should fall apart easily.
- Add the chicken back to the slow cooker. Add the pasta noodles and diced tomatoes.
- Place the lid back on and continue to cook the slow cooker on high heat for another 20 minutes, or until the pasta is fully cooked.
- Salt and Pepper to taste. Add in the parmesan cheese and let melt on top. Serve warm and enjoy.
