Summertime!! Yaay! Well, almost. My kids still have three days of school left. Seems like we’re the last ones still in school! The never-ending school year.
Summer makes me think of BBQs, pool time, lemonade, and fireworks. The fourth of July is one of my favorite days! Always a fun day to get together with friends, eat, drink, be merry. The best way to have get togethers is to make it a pot luck type event. I love trying the dishes that people bring. Because you know they are going to be bringing something yummy, when you’re feeding others you always bring your best stuff!
This fruit salad is the perfect addition to any BBQ this summer! The colors are perfectly patriotic, making it a must for the fourth. But the best part is the coconut lime flavoring that makes this a win for the entire summer!
Soo, about the coconut. Do you ever get in your mind that you are totally a do it yourself type person. And then it absolutely does not work out according to plan?
I was at the market, I knew I needed my berries, my lime, and I wanted large coconut flakes. Well, the market I was at didn’t have any coconut flakes. So I figured, well, this actual coconut is on sale, I’m sure I could figure out how to make my own coconut flakes. I really had no idea what I had gotten myself into until my husband kindly asked me, “How are you going to open that?”
Hmm. After googling (is that a real word yet?) I found something telling me the best way is to drill a hole into the coconut, drain the water, heat the coconut…and honestly I don’t remember after that. It sounded so complicated. I did attempt hitting it with a hammer, but the baby was napping and it was so noisy.
Anyway, fruit salad making went on hold so I could go to Whole Foods where I found a lovely variety of coconut flakes. I happened upon a bag of lime flavored coconut flakes. It was meant to be.
So much for my experimenting with a real coconut. I was able to use it in pictures though. Now I’m not quite sure what I’m going to do with it.
Anyway have any suggestions?!
Back to the fruit salad..as long as you can find some coconut flakes this is so easy to make! Completely PATRIOTIC, completely yummy, and completely fresh and healthy! Enjoy!

Red White & Blue Fruit Salad. This patriotic fruit salad also has a refreshing coconut lime taste! Perfect to take to that BBQ this weekend!
- 2 cups fresh blueberries
- 2 cups cut fresh strawberries
- Juice from 1/2 lime
- 1/4 cup coconut flakes
- Mix the blueberries and cut up strawberries in a bowl.
- Squeeze the juice from the lime onto the berries and mix together.
- Sprinkle with the coocnut flakes and stir just to mix.
- You can always toss some more coconut flakes on the top for the presentation!
Notice that the recipe is for feeding 4 people. If you’re taking this to a large gathering you will want to increase the amounts of berries!
