Description

Pina Colada Popsicles. These smooth and creamy homemade popsicles are loaded with fresh pureed pineapple, coconut milk, and a hint of rum if desired! These are the perfect tropical frozen dessert for kids or adults! Easy to make, and great for summertime.

Scale

Ingredients

113.5 ounce can coconut milk

1 cup pureed pineapple

1/4 cup cream of coconut (at room temperature)

2 ounces coconut rum (optional)

Instructions

  1. Combine all of the ingredients into a medium size mixing bowl (including or excluding the rum). Stir to combine completely. Make sure the cream of coconut is at room temperature. If it is cold it will separate from the other ingredients during freezing.
  2. Carefully pour the mixture into a popsicle mold (affiliate link). Add the popsicle sticks. Place in the freezer for at least 6 hours until frozen.
  3. To remove the popsicles once frozen, you can run the popsicle mold under warm water briefly, or let sit and warm in room temperature for several minutes.

Notes

My favorite popsicle mold and the one in the pictures is the Norpro Frozen Ice Pop Maker. (affiliate link)
