 Who has their meal all planned out for Thanksgiving?  I’m almost ready.  On paper at least.  I’ve got most of my recipes all together and working on a shopping list.  Trying to be on top of things this year.  I can’t believe it’s already almost here!  Every time I have a moment to think about it and plan things out I realize how quickly it’s sneaking up on me.  I’m super excited because my hub’s family is coming to visit.  Which will be a lot of fun.  For those of you who follow along we recently moved several states away from all of our family, so this will be our first set of visitors to come see us!  

And of course there’s always the fact that I do a food blog, so of course the food better be bomb right?  Talk about added pressure.  If you’re looking to impress this holiday season, these mashed potatoes are the way to go.  Other side dishes can come and go from my holiday table and I don’t mind much.  But I will always have mashed potatoes.  They are an absolute must for me.  So is the pumpkin pie.  What dishes are you attached to?  Which are your favorites?

So these mashed potatoes come dressed for the occasion, they are loaded with goat cheese, sun dried tomato, and a sprinkling of chives on top.  Mashed potatoes flavor blasted.  And of course they’re super creamy too since they’re made with butter AND sour cream.  I think sour cream is the secret to amazing mashed potatoes.

{Goat Cheese + Sun Dried Tomato} Mashed Potatoes

These super creamy mashed potatoes are loaded with goat cheese, sun dried tomato, and topped with some fresh chopped chives.

Ingredients

  • 4 lbs russet potatoes , peeled and chopped
  • ¼ cup milk
  • 3 tbsp butter
  • ½ cup sour cream
  • 2 oz goat cheese
  • 1 tsp salt
  • ¼ cup sun dried tomatoes, chopped (if kept in oil blot off as much oil as possible)
  • optional toppings-Chives

Instructions

  • Add the potatoes to a large pot of water and bring to a boil over medium heat. Allow to boil for about 20 minutes or until the potatoes are soft and easily mashed with a fork.
  • Drain the water from the potatoes and add the potatoes to a large mixing bowl.
  • Add the milk, sour cream, butter, and mix over medium speed until the potatoes are smooth and creamy. (I used my KitchenAid Mixer, if you don't have a mixer you can use a masher).
  • Add in the goat cheese and salt, mix until well combined.
  • Lastly stir in the sun dried tomato until fully combined.
  • Add additional ingredients as needed to get to desired consistency. Salt and pepper to taste.
