Since these cupcakes are made with actual cinnamon rolls this counts as a breakfast right?

And yes, you heard me right!  These cupcakes are made with Pillsbury Cinnamon Rolls.  I found myself wondering if I could bake the dough from the cinnamon rolls in my cupcake tin.  And what do you know, you sure can!  Which makes them perfect to grab and go.  You could coat them in the cream cheese glaze that comes with the package, and it’s a delicious breakfast that’s easy to set out for a group of people.  Plus I think they may be slightly more fun in cupcake form.

Or…you can go all out with a delicious cinnamon cream cheese frosting.  And you could even go further and do a straight shot of pure sugar and cinnamon mixed with butter and swirl it into the frosting.  You know, if you’re into that kind of thing.

Which in case you didn’t know.  I am totally into that kind of thing!!!  This to me is a breakfast! Although I completely understand if you prefer to make these for an actual dessert like a normal person.

These are so easy to make, since the dough is just the can of the cinnamon rolls from Pillsbury.  As you can see here I just divided them as they come, and put one per cupcake liner.  I had to change the baking directions slightly from what you would normally cook them at.  But they come out perfect.  So moist and fluffy.  Easiest cupcakes ever!

The frosting recipe is below.  Cream cheese is a perfect base for any frosting.  So easy to change up.  And to add just a bit more flavoring I swirled in that extra cinnamon sugar.  Trust me, it takes these to a whole new level.

Just add the frosting to the piping bag, and then the butter, sugar, cinnamon mixture into the side of the same piping bag and it will come out in a wonderful swirl!

Cinnamon Roll Cupcakes

These cinnamon roll cupcakes are made with Pillsbury Cinnamon Rolls and topped with a cinnamon cream cheese frosting swirled with extra cinnamon and sugar!

Ingredients

  • 1 pkg Pillsbury Cinnamon Rolls

Cinnamon Cream Cheese Frosting

  • 6 oz cream cheese , softened to room temperature
  • 2 tbsp butter , softened to room temperature
  • 1 ½ tsp cinnamon
  • 4 cups powdered sugar
  • ¼ tsp vanilla
  • 1 tbsp heavy cream

Cinnamon Sugar Swirl

  • 2 tbsp butter , softened to room temperature
  • ¼ cup sugar
  • 2 tbsp cinnamon

Instructions

  • Preheat the oven to 350°F. Line cupcake tray with liners.
  • Open the package of cinnamon rolls and separate the dough, placing one cinnamon roll per cupcake liner.
  • Bake for 10-12 mins until cooked through. Top will be golden brown.

Cinnamon Cream Cheese Frosting

  • Add ingredients into large mixing bowl. Mix starting on low speed for 2 minutes. Then mix on medium speed for an additional 3 minutes. Frosting will start to peak.

Cinnamon Sugar Swirl

  • In a smaller bowl add the ingredients, and mix together with a fork. It will form a paste type consistency.
  • To create the swirl on the cupcakes I added the frosting to a piping bag, and then added the cinnamon sugar mixture to the side of the same piping bag. I used a Wilton 2D frosting tip. There is only a small amount of cinnamon sugar mixture, so it will be a small swirl when you frost the cupcakes.
