Who loves chocolate?!? Me!! I am such a fan of these cake batter cookies! They are so simple and easy to make, and they come out so soft and moist and these ones are oh sooo chocolate-y.
The cookies were made with a milk chocolate cake mix. I made them late at night, there were no children around, my husband was sleeping. It was quiet and peaceful. There was no one to witness that I ate
four one…and a half…to try them out.
On my last trip to the market I came across these super fun Wilton sprinkles for St. Patrick’s day. So of course I had to use them. The most challenging part of this cookie was melting the white chocolate. Just a warning, it’s very easy to burn it. And it does not smell good.
What I ended up doing was putting the microwave on 50% and heating it up 30 seconds at a time to slowly melt it. The adventure with the white chocolate was definitely worth it. And of course the sprinkles as discussed previously, just make everything fun! No one can be grumpy when there’s sprinkles involved.
I have discovered that cake batter cookies are fun, versatile, and they really can be dressed up for any holiday. Not to mention they are super easy, and very tasty!Print
- 1 box of cake mix
- 1/2 cup softened butter
- 1 teaspoon baking powder
- 2 eggs
- Preheat oven to 350 degrees
- Mix together baking powder and cake mix in large bowl
- Add in the butter and eggs, mix until smooth
- Line your baking sheet with parchment paper
- Roll dough into small balls about 1 inch in diameter
- Place on baking sheet about 2 inches apart
- Bake for 12 minutes or until baked through
- Cool on wire rack
