I love sneaking veggies into my family in unexpected ways. And this meal here is no exception! These Veggie Burgers are loaded piled up with extra veggies and topped with a spicy ketchup that will make even the pickiest eaters happy. I’m definitely in love with this easy to make meal that can load the family up with veggies. Not to mention as I stare down these last two weeks of pregnancy, I’m also staring down a new healthy diet for myself to lose all this pregnancy, cookie weight. The worst part about being pregnant during times like Thanksgiving, Christmas, AND Easter. I indulge, and don’t get to lose. It just stays.
So with that in mind, I’ve been on the hunt for delicious meals that are healthy also. Meals that I can make for myself and for the kids and have everybody happy. Ahhh. A happy family. Nothing is better! These Veggie Burgers are actually another cheat of mine, saving time I went with New Boca Essentials. These are a line of vegetable-and grain-based patties. They offer a source of complete protein for those of us looking for a meatless option. The complete protein just refers to the nine essential amino acids that we need, and can’t produce on our own. Meaning…meatless, and healthy! Not to mention eating healthy supplies energy. And with all these littles running around, I definitely need that.
The best part of these Boca Essentials, they have different flavors! I was able to find a favorite for everybody. My favorite was the Roasted Vegetables and Red Quinoa with brown rice. The kids loved the Breakfast Scramble with potatoes, scrambled eggs and vegetables, while the hubs devoured the Chile Relleno with green chile peppers, black beans and brown rice. A little something for everyone. The three varieties of Boca Essentials are available at select retailers nationwide and can be found in the freezer case at grocery stores. A single, 10-ounce pack contains four patties and retails for $4.29.
Now onto that ketchup that I made. The inspiration came from a wonderful meal that the hubs and I enjoyed while on our honeymoon in Las Vegas. Possibly the best burger place I have ever been to. Of course they had many options for sauces also. One being a spicy ketchup. So to add a little flair I decided to make my own Spicy Ketchup. It’s not so spicy that kids won’t eat it. But it gives a nice little kick and extra flavor and fun!
