Ice Cream Cupcakes without the ice cream! These no ice cream cupcakes are decorated with a simple vanilla frosting to look like they are topped with an actual ice cream cone. Plus there’s tons of SPRINKLES!
I always see ice cream cupcakes. Or cupcakes with ice cream filling. Or ice cream frosting. Or there’s even the cupcakes that people bake INSIDE of the ice cream cone (has anyone tried that?! Does it really work?!)
I love the idea of ice cream and cupcakes together. But then as I think about it, those have to stay in the freezer right? Sometimes that’s not realistic. For example, if you want to make some super cute ice cream cupcakes to take to a picnic potluck!? They probably won’t last for very long.
That’s where these no ice cream cupcakes come in!
They look like an actual ice cream cone stuck on top of a cupcake right? At least that’s what I was going for.
I started with the sugar cones and of course had to dunk those in chocolate and add SPRINKLES. Because life is just happier when there’s SPRINKLES involved.
The cupcakes I have here are just a devil’s food cupcake mix. I’m a busy lady. Mixes are my friend. As long as I can dress them up 😉
The frosting is just a simple vanilla frosting that I’ve used before with the Circus Animal Cookie Cupcakes. It’s my favorite go-to frosting. So easy to make and change around.
Ok, so we have the ice cream cones, we have the cupcakes, we have the frosting. What I did was spread a little bit of frosting on top of the cupcake. Then I did a scoop of frosting, using my ice cream scoop of course, and put it into the ice cream cone. Then I added the SPRINKLES to the top of the cupcake and the ‘ice cream’.
Smash the ice cream cone down on top of the cupcake and there you have it! A no ice cream cupcake!
Fun, cute, durable. This one won’t melt on you so it’s perfect to take to that Memorial Day picnic you’re planning on going to. Maybe even dress them up with some red, white and blue SPRINKLES!
