Why Make this Farmer’s Market Cornbread?

  • This is a dressed up version of a classic recipe. Cornbread is a great side dish to so many meals. Adding the ingredients to the top adds a little extra to a simple recipe.

Ingredients Needed:

  • Cornmeal & Flour: this makes the base of the dry ingredients needed.
  • Baking Powder: gives rise to our cornbread.
  • Salt
  • Egg
  • Buttermilk: gives extra moisture to the bread. If you don’t have buttermilk on hand you can use a mixture of milk with 1 tsp of vinegar or lemon juice added. Let it sit briefly until the milk thickens.
  • Honey: for just a touch of sweetness to the bread.
  • Sharp cheddar cheese & Grilled corn: add this to the actual cornbread for more texture and cheesiness.
  • Fresh vegetables and herbs: grab what’s fresh and in season to add to the top of your cornbread.

How to Make:

  • Step 1: Pour oil into a 6.5 inch cast iron skillet. Place in the oven for 10 minutes to heat the oil.
  • Step 2: prepare the cornbread batter.
  • Step 3: Once the oil is heated, remove the skillet from the oven. Pour the cornbread batter over the hot oil, be careful!!
  • Step 4: Place the skillet back in the oven and bake for 10 minutes.

Step 5: Remove from the oven and add your toppings. Place back in the oven and bake for another 20-25 minutes, or until the edges of the cornbread are golden and starting to brown. A toothpick inserted in the center should come out clean.

F.A.Q

Why is my cornbread dry?

Using too much cornmeal can dry out your cornbread. Make sure you are using equal parts flour and cornmeal to cut down the dryness.

Can I make this with a cornbread mix instead of homemade cornbread?

Absolutely! Follow the directions for the cornbread you are making and after it bakes for 10 minutes, remove from the oven and add the toppings, then continue baking.

Do I need to add the honey to the cornbread? I prefer mine not sweet.

Yes! Adding sweetness to cornbread is a controversial thing, if you would prefer to not have honey in your cornbread you can leave that ingredient out.

Ingredients  

  • 2 tbsp canola oil
  • 1 cup cornmeal
  • 1 cup all purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 large egg
  • 1 cup buttermilk
  • ¼ cup honey
  • 6 ounces sharp cheddar cheese shredded
  • cup grilled corn

Toppings

  • cherry tomatoes
  • fresh basil leaves
  • sliced jalapeno
  • fresh grilled corn
  • sliced red onion

Instructions 

  • Preheat the oven to 425°F.
  • Pour the canola oil into a 6.5 inch cast iron skillet. Place in the oven for 10 minutes to heat the oil.
  • Meanwhile, prepare the cornbread batter.
  • Add the cornmeal, flour, baking powder, and salt to a medium size mixing bowl. Whisk together. In another small bowl add the buttermilk, egg, and honey. Stir to combine.
  • Pour the wet ingredients into the dry ingredients. Stir until combined.
  • Add in the grilled corn and cheese. Stir to combine.
  • Once the oil is heated, remove the skillet from the oven. Pour the cornbread batter over the hot oil, be careful!!
  • Place the skillet back in the oven and bake for 10 minutes.
  • Remove from the oven and add your toppings. Place back in the oven and bake for another 20-25 minutes, or until the edges of the cornbread are golden and starting to brown. A toothpick inserted in the center should come out clean.
  • Allow to cool, slice and serve! Enjoy!
