Hey y’all! Friday’s deserve cake! So I made us a little chocolate bundt cake with a pumpkin cheesecake swirl. And did I mention the chocolate ganache drizzle on top?? Yea. It’s kind of perfection.
I’ve been on a real pumpkin kick lately with the Pumpkin Spice Truffles, Pumpkin Snickerdoodle Cobbler, and this Slow Cooker Pumpkin Spice Apple Cider. But there’s just something about a pumpkin and chocolate combination that makes my heart go pitter patter. Especially when the chocolate cake is moist, rich, and fudgy. And the pumpkin is in the form of cheesecake. With hints of cinnamon and nutmeg to give just a bit of spice. And the chocolate ganache!? Oh my.. you may want to make a little extra to make up for what you end up licking off the spoon. It’s smooth, soft, and the perfect complement to this cake.
This cake is a lot easier than it may seem. I used this 12 Cup Bundt Cake pan. Just make sure you spray it down nice and good with some baking spray. It’s a non-stick pan, but I wasn’t taking any chances! A quick spray down and I promise your cake will slide right on out to perfection.
To get the cheesecake layer in there we just pour half the chocolate cake batter in, layer the pumpkin cheesecake being careful not to touch the cake pan with it, and then top with the rest of the chocolate cake batter. This lets the cake bake with the tunnel of pumpkin cheesecake love on the inside and not show on the outside! Making it a wonderful surprise when you first cut into this perfect Fall dessert.
